Here are a few of my favorite ways to ferment my food scraps, which I hope will be a jumping off point for you to explore these and many, many other possibilities. Lactofermented foods are incredibly diverse and the process of lactofermentation itself is incredibly easy, meaning you can have an ever-evolving pantry of sour and funky condiments, veggies, sauces, and main attractions all made from scraps.
